Green Shakshuka with Edamame & Feta

Bright, wholesome, and bursting with flavour, this Green Shakshuka is a vibrant twist on a classic. Packed with greens, protein-rich edamame, and creamy feta, it’s ready in just 25 minutes. Warm spices like cumin and coriander pair beautifully with soft eggs and tangy Greek yogurt, creating a comforting yet fresh dish perfect for brunch or an easy, nourishing dinner.

Green Shakshuka with Edamame & Feta
Serves: 4
Time: 25 minutes
INGREDIENTS:
- 1 yellow onion, chopped
- 2 garlic cloves, chopped
- 150 g leek, sliced
- 1/2 tbsp olive oil
- 1 tsp cumin
- 1 tsp ground coriander
- 1 vegetable stock cube
- 100 ml water
- 65 g fresh spinach
- 150 g edamame beans (cooked, frozen)
- 8 eggs
- 200 g 0% Greek yogurt
- 1 fresh jalapeño, sliced
- 75 g feta cheese
- Salt & pepper
METHOD:
- Fry onion, garlic, and leek in oil with spices and stock cube.
- Add spinach and edamame, simmer until wilted.
- Make 8 wells, crack in eggs. Cover and cook until yolks are soft.
- Serve topped with yogurt, jalapeño, and crumbled feta.
